Does the BEC on an ESC reduce the voltage to an acceptable level for the receiver? According to the specs sheets I have seen most Rx have an operating range of 4.8V to 6.0V, but most EPs run 7.2V+ packs.

An ESC will reduce the voltage to an acceptable level for your receiver.

Yes, the ESC will do that for you, but remember to make sure you use the right amount of cells and Servos according to the ESC specifications. For instance, some ESCs on 10 cells can handle 3 servos, whereas some cn handle upto four servos. Also depends on what servos, whether mini or standard.
So, read the manual carefully for specs on your ESC.
