Sounds like a great project. I have a saito 300 on CH ignition powering a Balsa USA 1/3rd sopwith pup at 40+ pounds Spins a 24x10 wooden prop @ 7000 lots of power and very scale like. You'll love it.

I have 4 saitos on CH ignition and love them all. The 300 is extremely reliable, and will idle all day at 1400 if you want it to. They are readily available, lightly used on RCUniverse and our dollar is real good right now.
