You could have large sheet of tempered glass setup on a large hinge system on the edge of the bench. Glue the edges, tape, lay wax paper on top of the sheeting and then put the glass top down.

If you could find a large set of hinges that turn a full 270 degrees you could just fold the glass back to hang off the back side of the bench to avoid having to lift all that weight.

I've got two glass desk tops that I'm using for cutting my covering on at the moment. Even those would work well, I'd think. And because there's two of them they're pretty manageable to move around by yourself.
