Spektrum AR-8000 amperage capacity
I will be assembling a 55cc Sbach and questioning the need for a power expander. Can I use the Spektrum AR -8000 as is or should I bump up to the AR9110 for higher amperage capacity?

you will be fine with the AR8000 as long as there is only 1 servo per control surface (which on a 50cc plane should be the case).
For some sort of redundancy, you could plug in two receiver batteries, each with their own switch. If you do this with the AR8000, you just have to make sure both packs are of the same type and capacity, and in similar condition. If you get up to 7 or 8 high power servos I would recommend the AR9110
