I have the Saito .91 in my Hog Bipe with a 14x6 apc prop. They do take a while to break in and each while the power just increases. My high speed is 3 full turns out and I have loads of power. This is after about 3 gallons. As you noted you have more engine than you need so take advantage and keep it rich and you'll be rewarded with a long living engine.
As has been stated, if you follow the book that came with the engine, you can't go wrong. Bob
