Hi guys ! I finally received my new esc, it is a quicrun from hobbywing. I plugged this new esc, eliminating all the other wires from other esc to deactive the becs (red wire) and removed the small 6V battery pack. Finally, everything is fine, no more smoke etc.
It seems that this was the problem...I learned something and thank you all for that.
My boat works fine and even a little too fast for this type of boat. The two 540 motors are really powerful even for a 38 inches boat which is quite heavy.

Hi guys ! I did followed your advices and plugged my new esc received last week, a quicrun 860 with two output for motors. I removed the 6v power pack, unplugged the red wire from the second esc and everything is now working properly !
I learned something !
