It was exactly as you described- floats retracted into the lower fuselage it was a pattern-type plane too. It looked nice, but also looked like a lot of work. Only for the serious float flier or someone who lives on the water and would prefer to fly aerobatics over the water rather than have to drive to a proper club field

I did a search on the Internet and there is examples of full scale aircraft using retractable floats. None that made into production

Full-scale aircraft usually fly faster and generate more lift on floats because they generate lift. You might find performance actually reduced with a 'retractable' set.
Related: Flying Scale Models (I think) had a mention of a coming scale model of the Sea Dart...

All the float planes I worked on the front of the floats extended out in front of the prop by quite a bit to keep the prop out of the water. Retracting the floats backwards will cause a serious tail heavy problem. A fan jet amphibian or flying boat would be an easier project to make aerobatic. I would start off with a long plaining hull and a "T" tail.

The Sea Master I had I put an old Webra .60 with a Perry pump on it and ran a piece of brass tube down the L/E of the pylon and put the fuel tank in the hull. This offset the weight of the engine and made it more manoeuvrable. Unfortunately I put the wrong screw in the aileron servo arm and it fell off in flight. These aircraft are very manoeuvrable even with the fuel tank on the pylon.
