I use a solid wood door with a piece of 24"x72" 16ga steel glued to it setup on a pair of work horses. It remains dead flat and true.
I made the magnetic jigs and I bought the latch magnets from a company called Master Magnetics in Colorado. They were the cheapest supplier I could find at the time.
Against the magnets, I use aluminum sections as straight edges.
I tape the plans to the steel and then tape waxed paper (grocery store) over the plans.

Works pretty good for ARF's too!
I've never used anything else except a piece of pine board for my Guillows kits.
