Throttle curves are crutial for the gassers we fly as 1/2 carb butterfly opening = ~3/4 peak rpm. It's also crutial for twin engine crafts in order to get them sync'd. Nitro engines can often benefit as well. Ever noticed how your glow engine runs at peak rpm 80%-100% of the throttle stick? A curve will fix that as well.

Lastly, this year flying IMAC for the first time, throttle curves can help you if you think of it like a mix. Depending on the manouver you want the engine/motor putting out a certain amount of power to more accurately perform it.
