I think it is a large voltage drop on your lipos with that current draw with the C25 rating causing your ESC to drop out. You didn't say what brand of prop you were using as a 5x5 . Try an APC 4.75x4.5 or even a 4.1x4.1 and check you current draw. The APC props draw less current than other brands. The link that you posted with your motor performance was based on 10.5 volts. A fully charged 3s will be higher at over 12 volts and believe it or not a couple of volts more will draw substantialy more current. "Been there , done that" with a larger installation. Before changing anything out try the above mentioned props to see what you are drawing and get back. Props are cheaper than ESC's , motors or batteries.
