I suppose the best way to do it is to scope out the hardware for VP. I have seen complete kits for sale. They are not that complicated to set up once you have it in your hand.

You will need a computer radio to slave the pitch servo to the throttle. The easiset way to configure one is to set up the radio in helicopter mode, even though you are using it on an airplane. You will now have the benefit of setting up multiple itch/[power curves for each flight mode, which can be selected while in flight.
For example, Flight mode 0 could be set to fixed pitch and would make the plane behave normally.

Flight mode 1 could be set to variable pitch and max throttle at low and high stick, giving you full throttle and positive pitch at full stick, and full throttle and reverse pitch at bottom stick.

After flying around in 3D and reverse pitch in mode 1, you switch back to mode 0, and land your plane as any other normal plane.
