The powered parachute guys put the throttle between their teeth, it is like a plastic clothes peg, maybe something like that could be used for the throttle.

Ummm... Not quite. Look closely and you will see that the phone has been directly interfaced with a 2.4 ghz TX module. No cellular networking stuff there.
