Some food for thought, I used to (and still am) be in love with the GWS line of airplanes. You can get an airframe only kit (slope glider) for peanuts, and theres tons of inexpensive motor combos for them. My fav combo for their warbirds is the BP Hobbies 2212-10 motors with a 20A ESC and 3 cheap servos. and decent 1500mah 3S liop will do the trick. I would say you could easily get these combo's in the air for well under $150. Before the BNF line was really popular, I would often teach people to fly with the EStarter. Would be a great aileron trainer, you can mod the crap out of them, and there's actually a little "building" involved.

I was going to suggest the GWS planes as well. They aren't hard to build and will teach you a lot in terms of servo's, linkages, power systems, etc.

I strongly recommend you do a google search on them before purchasing to get a feel of the model. Some of them are great flyers, others less so.

BTW, my GWS E-Starter below. Believe it or not, I haven't flown her at all!

My tastes changed and I tend to fly smaller and lighter balsa planes now. I really should sell it to someone who'll actually fly her...

Any scratchbuild I ever made, I always try a test glide with fixed locations of motor, fuel tank, landing gear in place.
This will tell where the C of G should be, and if the decalage is right.
THEN, other stuff like servos and battery can be located for the C of G.

Of course, this would be for light and smaller models, but, if I were to
undertake a serious warbird of 6 ft span, I would make a styrofoam mockup
as close as possible for test gliding.
This would also tell me if I actually liked the airplane at that size,
and expose what kind of rocket science I would be doing for the
canopy and engine cowling.
