Programming ESC with a JR783

I am new to electric pattern flying and currently have a 2m F3A aircraft with a Castle Creations ICE2 HV80 ESC. I am flying it with my JR783 radio using a 2.4 module and Spektrum receiver. I have the plane pretty much dialed in now with pitch and roll coupling in knife edge figured out.
The question I have has to do with the throttle and the ESC. I have my Travel adjust set for 100% for High throttle and just set the Low throttle such that the engine switches off when the stick is full down which in this case turns out to be Low travel adjust set for 55%.
To arm the ESC I just pull the trim tab down from center with stick in the low position and she arms.
I understand that in pattern flying you want a flatter throttle curve around the middle stick position. I can't do that with my 783 as I understand it. But is there another way? What about my travel adjust figures...did I do that right? As it stands, full throttle sure is full throttle and low throttle turns it off. At mid throttle I seem to be at, well, half throttle.

Just in case anyone was wondering how this worked out, here's what I have learned.

I bought the Castle Creations USB Programming Link and hooked it up to my ESC. I changed the throttle from Auto-Calibrate to Fixed Endpoints. Took off the prop to be safe. I then went into my Tx and changed the Travel Adjust for High and Low Throttle to about 30%. Then set throttle to High and increase the travel adjust toward 100% until the ESC beeps...then go 2% beyond that. Then sent throttle to low and throttle trim to low and do the same thing until the ESC beeps and then add 2%.

Voila! Throttle endpoints set and mid stick is now mid throttle.

Radio is too old to be able to program the throttle curve however.
