Of course you can learn 3D without a sim - no one would argue that. The simulator will get you there cheaper and faster. I get 4-5 times (likely more some weeks) stick time because I have the sim, I just can't get out to fly four an hour everyday - but with the sim I can. That is the major benefit for me. Of course, as you mentioned it will make learning new moves easier and cheaper.

Why wouldn't you want a sim? It is a tool, you can live without it, but once you have it you can't imagine how you got along without. If someone took my sim away I would be yelling "hey I NEED that..."

Yes, you can learn without a sim; but for most of us, the sim makes it a muck quicker and less expensive (and safer) learning experience.

I thin the reason we see pilots like 4 year old Justin Chi is largely a testament to the quality of simulators.

In a Canadian context, without simulators many of us would get far less stick time throughout the long Winter months.

I guess I'm just spoiled being able to fly every day due to the nature of my job...there's days where I can easily get over an hour of stick time.

For me, it's the exact opposite - I can fly the real thing much more often then I'd ever have time for a simulator.
