Jerry, I understand where you are coming from, I always considered planes without ailerons lacking, but I must say in case of the EasyStar it is not the case. It is well designed and with a larger rudder it can be held steady in pretty strong wind and in these conditions, loaded up with more weight it does even better. ( don't forget it was designed as a primary glider/trainer so no overly effective surfaces were necessary ) For travel it is easy to tear down with no aileron servos to plug in and you can't beat simplicity of 3 channel plane. The clones do not fly as well and not as stable and most people fly planes with ailerons in constant lean to one side or another making you ill watching the videos. EasyStar with rudder turns can be turned very shallow and avoid this in the video.
The easy glider can also do this well if you make shallow rudder turns and use opposit aileron to keep the wings steady, totaly opposit to normal flying, but great for video. Unfortunately the 'wings', that I like, have this issue also unless a rudder is added like the indoor guys use for more control.

I agree Dan...the simplicity of the EZ* is great. I had mine converted to ailerons but wasn't really happy with them believe it or not. I have extended the rudder which I found helps tremendously, especially when downwind. I have flown this plane in scary winds. My rule of thumb with the easystar is that if the box it came in blows away, it's too windy.

Jerry...I think that you are really on the right track with the's going to be a great AP ship.
