Most FPV "cockpit" views are from mock-cocpit with no winscreen. The mock-cockpit is just hanging out in the breeze but when viewed via FPV, it "looks" like a real cockpit. Plus no hazy/crazy plastic windscreen to look through.

In your case, maybe make a new canopy that you can use for FPV, and then put back the original canopy when you want to fly LOS.
It doesn't have to be pretty. It just has to look good when looking "out" the camera.
You can make a new "exposed" canopy using dollar store foam.
